Popular regional eatery expands its bold border fare and introduces new fish taco creation
Folsom’s love for Southwest-inspired cuisine just got even more delicious. Dos Coyotes Border Café has officially opened its second location in the city, bringing its signature fusion of bold flavors and laid-back atmosphere to the Broadstone Marketplace. The new restaurant, located at 2750 East Bidwell Street, opened its doors Tuesday, filling the space formerly occupied by Rubio’s Coastal Grill.
Founded by Bobby Coyote, who was all smiles at Monday’s official opening, Dos Coyotes is no stranger to Folsom residents. Its original city location at the Red Bull Center on Folsom Boulevard has long been a favorite among locals. With this new outpost on the east side of town, Dos Coyotes fans now have even more access to the restaurant’s fresh, flavorful menu.
Coinciding with the grand opening, the kitchen has rolled out a new menu item just in time for Taco Tuesday: the Crunchy Fish Taco. Created by Chef Mark Casale, the new dish features a Pacific cod filet marinated in beer batter, rolled in a crispy panko crust, and topped with Thai green papaya slaw, pickled onion, and avocado tomatillo salsa—served on two warm corn tortillas. It’s a fitting nod to the space’s former fish taco roots while putting a Dos Coyotes spin on seafood.
The Broadstone location maintains the restaurant’s vibrant, casual vibe and will offer the same popular lineup of quesadillas, burritos, salads, and house-made salsas that have made Dos Coyotes a household name across Northern California. The new fish taco is a unique addition at this site, adding to its appeal as a fresh destination for both loyal patrons and curious newcomers.
Dos Coyotes Border Café began as a dream rooted in Coyote’s passion for Mexican cuisine and Southwestern flavors. Raised in West Los Angeles, he spent his youth experimenting in the kitchen with carne asada, grilled chicken, and authentic salsas. A visit to Santa Fe ignited his love for the region’s culinary and artistic influences, which eventually became the backbone of his restaurant concept.

Before launching his restaurant career, Coyote worked in creative and technical fields, including as a laser light technician for the legendary band WAR. But it was his time managing Café Figaro in L.A. that crystalized his desire to open a “people’s restaurant”—a place where high-quality food could be enjoyed at an affordable price.
That vision came to life in 1991 when he opened the first Dos Coyotes in North Davis. The menu emphasized simplicity and flavor, featuring tacos with flame-broiled meats, cebollitas, and fresh salsa, all wrapped in warm corn tortillas. Over the years, Coyote’s commitment to culinary creativity and community hospitality has propelled Dos Coyotes into a dozen locations across the Sacramento region and beyond.
