The vacant space at 2776 East Bidwell Street in Folsom’s Broadstone Marketplace, once home to Rubio’s Coastal Grill, is set to get a fresh start. Dos Coyotes Border Cafe has announced plans to open its second Folsom location in the space left vacant after Rubio’s suddenly closed and filed for bankruptcy last spring.

The new location will be the 12th Dos Coyotes restaurant in Northern California, adding to its mix of privately licensed and franchised establishments. One of the chain’s long-standing and successful locations has been at 13386 Folsom Boulevard in the Red Bull Center. With this expansion, Dos Coyotes fans in Folsom will now have locations on both sides of town.

While the Broadstone Marketplace location will feature the same popular menu as its counterparts, it will also include a special addition: fried fish tacos. According to Bobby Coyote, the founder of Dos Coyotes, the new location will incorporate seafood options alongside favorites like quesadillas, salads, and burritos.

Dos Coyotes Border Café is the product of Bobby Coyote’s dual inspirations: his Los Angeles upbringing and his love for Santa Fe. Growing up in a quiet corner of West L.A., Coyote developed a passion for authentic Mexican cuisine. Experimenting in the kitchen from a young age, he honed his skills with dishes like quesadillas, carne asada, and marinated chicken.

A visit to Santa Fe sparked a deep appreciation for the region’s unique fusion of flavors, vibrant culture, and innovative Southwestern cuisine. This experience became the foundation of Coyote’s vision for Dos Coyotes—a restaurant offering bold, flavorful food in a lively, welcoming atmosphere.

Before launching his restaurant career, Coyote worked in various fields, including as a laser light technician for the rock band WAR. However, his passion for food led him to manage the trendy Café Figaro in Los Angeles, where he began dreaming of creating a “people’s restaurant” that served high-quality food at a price accessible to families and college students.

In 1991, Coyote opened the first Dos Coyotes location at The Marketplace in North Davis. The menu featured simple, flavorful tacos made with two warm corn tortillas, flame-broiled steak or chicken, onions, cilantro, charbroiled cebollitas, and house-made salsa. Seasonal specials soon became a signature feature, allowing for culinary creativity and showcasing the region’s produce.

Over the past three decades, Dos Coyotes has expanded its footprint while staying true to its core values: serving delicious food, fostering a lively atmosphere, and offering exceptional value. Coyote’s dedication to these principles continues to drive the restaurant’s success.

Renovations for the Broadstone Marketplace location are set to begin immediately, with the restaurant expected to open in March. A specific grand opening date will be announced in the coming months.
