A familiar spot in Folsom’s Palladio at Broadstone has been given a flavorful new life with the arrival of Fish & Things Poke Bar, a fresh and modern eatery that’s officially opened its doors with a soft launch this month.

Located in the same space once occupied by Poke Noke, the new poke concept brings vibrant energy, elevated ingredients, and an expansive menu to the heart of the shopping and entertainment district. It’s the fourth location for Fish & Things, which got its start in Elk Grove in 2017 and has since expanded to San Jose, San Diego, and now Folsom.

Founded in Elk Grove by CEO Nam Huynh and operated alongside Chief Operating Officer Be Ngo, Fish & Things began as a quick-service poke bowl restaurant with a focus on fresh ingredients, bold flavors, and made-to-order customization. What started as a local eatery has grown into a growing franchise model under Fish & Things Franchise LLC, with the Folsom location marking its latest expansion.

True to that mission, the Palladio menu is anything but ordinary. Guests can choose from signature bowls like the Salmon Volcano—featuring spicy salmon, crab salad, seaweed salad, and sweet onion—or build their own with a customizable mix of proteins, veggies, sauces, and toppings. Poke fans will find favorites like ahi tuna, salmon, spicy scallops, shrimp, and tofu for a plant-based option.

But Fish & Things goes beyond the bowl. The menu features inventive items such as salmon poke tacos wrapped in crispy gyoza shells, teriyaki chicken bowls, seared salmon plates, Spam musubi, and a variety of sushi rolls. Standouts include the Crunchy Tiger RollAloha Roll, and a customer favorite—Fire Cracker Balls, made of spicy tuna, crab, avocado, and jalapeños deep-fried into golden bites of flavor.

As with some of its other openings, the Folsom expansion follows a trend of Fish & Things bringing new energy to spaces formerly occupied by other poke concepts. In San Diego, the brand took over a location once run by Aloha Poke. In Folsom, it fills the vacancy left by Poke Noke, which closed last year in the Palladio.
