Just eight months after opening its doors with a promise of elevated Mexican cuisine and a bold new dining experience, Cantina Pedregal has announced it will close its doors. The news was shared in a heartfelt social media post by the restaurant’s team this week, marking the end of its short but impactful run in Folsom’s culinary scene.

“After much reflection and many heartfelt conversations, we have made the incredibly difficult decision to close Cantina Pedregal,” the announcement began. “Our last day of service will be April 19.”

The closure marks a significant shift for the restaurant space, but it is not the end of the culinary vision behind Cantina Pedregal. In its place, the owners will introduce Nixtaco—a more casual yet equally ambitious concept from the same team, Chef Patricio Wise and Cinthia, who founded the acclaimed Nixtaco Mexican Kitchen in Roseville.

“While this decision is bittersweet, it also marks an exciting new chapter,” the team wrote. “We are thrilled to announce that our beloved sister restaurant, Nixtaco, will be taking its place.”

Known for its in-house nixtamalization process and scratch-made cuisine, Nixtaco has received national acclaim, including a feature in Food & Wine naming it one of the best taco restaurants in the country.

“Folsom, get ready,” the post continued. “If you’ve visited Nixtaco Mexican Kitchen in Roseville, you know something special is coming.”

Cantina Pedregal opened in mid-2023 and quickly gained attention for its artisan-level menu, modern aesthetic, and fine dining approach to Mexican flavors. The restaurant was created with care and passion, according to the statement, which credited the team’s collective effort in making the vision a reality.

“We poured our hearts and souls into every detail, and we are deeply proud of what we created,” the statement read. “Cantina Pedregal was bold, ambitious, and unique—a vision brought to life through the passion of our incredible team.”

Former restaurant guest and community members responded to the announcement with disappointment but also showed support for what’s next across the company’s social media pages following the announcement.

“Our loss, you guys were wonderful! Glad to hear that Patricio will be expanding,” wrote Folsom resident Amber Hansen.

“Very sad to hear! I hope you continue a couple of the phenomenal dishes I had the pleasure to enjoy at Pedregal, if even just as occasional specials,” added Jon Wieneke.

In closing, the Cantina Pedregal team thanked the Folsom community for its support during the restaurant’s brief tenure.

“To our loyal guests and the Folsom community—thank you,” they wrote. “Your support over the past eight months has meant everything to us… While this chapter closes, a new one begins—rooted in the same values of authenticity, craft, and community.”

Nixtaco is expected to open in the same location shortly after Cantina Pedregal’s final day of service.
