Sandwich chain joins growing retail center near El Dorado Hills Business Park

Two different “Mikes” are helping set the table for more dining options in south El Dorado Hills, asJersey Mike’s Subsbecomes the latest restaurant to sign on at the Carson Creek Retail Center near the El Dorado Hills Business Park.

The national sandwich chain plans to open a new location at 4456 Golden Foothill Parkway, Suite 120, according to franchise listings and leasing materials tied to the project. The site is located at the northwest corner of Latrobe Road and Golden Foothill Parkway, placing it within a growing commercial corridor on the southern edge of El Dorado Hills.

Leasing documents confirm Jersey Mike’s has signed a lease for a 1,286-square-foot space at the Carson Creek center. An opening date has not yet been announced, but the store will mark the brand’s first El Dorado Hills location. Jersey Mike’s already operates multiple stores throughout the Sacramento region, including an established location in Folsom, with additional sites reportedly in development nearby.

Founded in 1956 as a single neighborhood sub shop on the New Jersey shore, Jersey Mike’s has grown into a nationwide chain known for freshly sliced meats and cheeses, baked-in-house bread, and a menu built around classic hot and cold subs. The company has long emphasized local ownership through franchising and community involvement, a model that has helped fuel its steady expansion across California and the country.

Jersey Mike’s joins another “Mike” already committed to the Carson Creek project. Mountain Mike’s Pizza has also signed a lease, securing a 2,431-square-foot space within the center. The pizza chain previously operated in El Dorado Hills but does not currently have a location in the community, making its return a notable addition to the local dining scene.

The Carson Creek Retail Center is anchored by an open and operating Tractor Supply Co. store and is situated adjacent to the El Dorado Hills Business Park. The site is designed to serve both nearby residential neighborhoods and the growing employment base in the surrounding industrial and office area.

Starbucks is also expected to join the tenant lineup at the Carson Creek Retail Center.

Several spaces at Carson Creek remain available. Leasing information indicates a letter of intent is pending for a 2,459-square-foot pad that includes a drive-thru, while three additional shop spaces ranging from approximately 1,159 to 2,010 square feet are still on the market. Two of those spaces include patio seating.

As the retail center continues to take shape, the addition of Jersey Mike’s alongside Mountain Mike’s signals an expanding mix of casual dining options for south El Dorado Hills. With the project’s proximity to major roadways and the business park, additional tenant announcements are expected as development and leasing continue.
