It was 7 years ago that Folsom residents Scott and Stacy Walters took on a new venture of operating their very own bagel eatery in El Dorado Hills. Now, the success franchisees are expanding, bringing Big Apple Bagels to the community of Folsom.

“We opened our first Big Apple Bagel shop in 2015 in El Dorado Hills and have absolutely loved our journey so far, Scott Walters told FolsomTimes.com. “We decided last year that we were ready to open our second location and since we are also residents of Folsom.

The new Folsom location will be in the in the Commonwealth Square center on East Bidwell Street.  The center is known as being home to Raley’s, Jersey Mike’s, Papa Murphy’s Pizza and others.

According to Walters, the size of Folsom and its continuous growth is what made opening a location in the city attractive. They have been successful in El Dorado Hills, which is a much smaller market.

“We felt our hometown would be a good place to land. Our El Dorado Hills location has treated us well and our catering requests are growing by the week, so a bigger store in a bigger city was the next step,” said Walters. “We love Folsom and can’t wait to offer up our goodies for our hometown.”

The Big Apple Bagels has locations in 14 different states a dozen states. The new location will be much like the El Dorado Hills location, the menu will sell a variety of traditional bagels that are made from scratch along with a variety of bagel sandwiches, muffins, coffee and more.  According to Walters, they expect to be open by fall of this year.

“Our projected opening is late summer/early fall, as some renovations at our location are necessary and the build/delivery on our special ovens and bagel former are 6 months out.”
