The first structure has risen and is getting its final touches by construction crews in preparation of several new tenants and eateries that have announced their arrival to the Folsom community. Among those tenants, will be an eatery known for its hearty hand-crafted grinders across the United States, Capriotti’s Sandwich Shop.
The Shops is one of several retail components that will one day complete the 3,585-acre Folsom Ranch Development. The rising retail center just on the south side if Highway 50 and sits on the eastern side of East Bidwell Street and sits between Alder Creek Parkway and Old Ranch Way, both of which will provide access points to the center.
Capriotti’s is slated to fill a 1,500-foot space in the same building that will be home to Bento Box and Slice House, as previously reported in a Folsom Times business article. The building is also set to host a Nail Resort and has one space that has yet to name a tenant, according to materials from the Edwards Company, who represents the center being constructed by Hunter Properties.
In addition to the soon to be Folsom location, Capriotti’s is also opening in the Anatolia community of Rancho Cordova, which is near Mather and the southern region of that city.
Capriotti’s early beginnings stem back to 1976 in Delaware when siblings Lois and Alan Margolet wanted to create something unique while honoring a family heritage. Today, the company has grown from a small family-owned shop into a renowned brand with locations now spanning across the United States.
The company’s history is reportedly rooted in its, “commitment to quality ingredients and an unwavering passion for crafting exceptional sandwiches.” According to the company website, what sets Capriotti’s apart is its, “dedication to using the freshest and finest ingredients available.”
Capriotti’s signature ingredient is stated to be its slow-roasted turkey, which they roast in-house daily in an effort to delight customers with maximum flavor and tenderness. Their attention to detail extends to their other sandwich offerings, including roast beef, ham, and vegetarian options.
The menu at Capriotti’s Sandwich Shoppe is an assortment of hot and cold subs, ranging from their iconic “Bobbie,” a Thanksgiving-inspired masterpiece with turkey, stuffing, cranberry sauce, and mayo, to the classic Italian sub filled with Italian meats and provolone cheese. Customers can also choose from a variety of salads and sides to complement their meal, and the company also offers catering services for gatherings and events. Capriotti’s was named one of Newsweek’s America’s Favorite Restaurant Chains 2022 and a Top Food Franchise by Entrepreneur Franchise 500. They now have locations open in 33 states, with many more than just Folsom and Rancho Cordova in the works. At this time the company has not announced its opening date of the Folsom location as interior construction continues on the building.
In addition to Capriotti’s and the aforementioned tenants, The Shops will consist of six structures in total. National Coffee is tentatively slated for a self-standing 2,200 square foot unit in the center that has yet to break ground. Additional businesses on the plot will include a Family Pet Hospital that will occupy a 6,900 square foot self-standing unit on the southeast corner of the property.
A 3,426-gas station and convenience store will occupy the northwest corner of the property as well. At this time there is a proposed 4,000 square foot self -standing unit on the northeastern corner of the property that has yet to name a prospective tenant.
